Buttermilk Banana Bread

Banana bread

I’ve been looking for a good banana bread recipe for a long time. I’ve eaten a lot of well made banana breads but have never had the chance to bake it myself and then I came across this buttermilk banana bread. It’s moist and beautiful! (No exaggeration) like bananas ripen and sweeten over time, this bread got yummier by the day. This is a lighter bread, both in colour and texture, compared to other banana bread recipes. Tastes just as good though!  Also, it’s something easy that Jana has been eating as part of her breakfast for the past four days. I get the feeling she approves! So here it is ladies and gentlemen, happy baking!

  • 1/2 cup butter, softened
  • 3/4 cups sugar
  • 2 eggs
  • 1 cup mashed bananas (I used 2 large bananas or 3 average sized)
  • 4 tablespoons buttermilk
  • 1/2 teaspoon vanilla
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

  1. Grease and flour 1 large loaf pan or whatever combination of pans you’d like. I had some mixture left over and poured the remaining in a muffin tin which turned out pretty good and handy for on the go.
  2. In a large bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. Add in the flour, baking powder, salt and soda. Mix until well combined. Pour batter into prepared pan and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean.
